There’s No Place Like Home for the Holidays

Coastal Virginia has so much to offer during the most wonderful time of the year. Read on for a variety of attractions and events that brighten our region and light up the season. But first, cookies…

Shannon’s Holiday Cookies

  • ½ cup of Crisco
  • 1 stick (4 ounces) margarine, softened
  • 2 cups of sugar
  • 4 large eggs
  • 1 cup buttermilk
  • 1 tsp. baking soda
  • 4 cups flour
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract

In a large bowl beat the Crisco, margarine and 2 cups of sugar until blended. Beat in one egg at a time.
In a measuring cup mix 1 cup of buttermilk and baking soda and lightly stir.

In another bowl mix the flour and baking powder. Alternate several times (4-5 times) the buttermilk mixture and flour mixture into the sugar/Crisco/margarine bowl and beat until combined. Once all mixtures are combined, add vanilla extract.

Spoon out tablespoon-sized mixture on an ungreased cookie sheet and sprinkle with red or green sprinkles. Bake in the oven at 425 degrees for 4-5 minutes.

Note: You can also frost the baked cookies, once cooled, with your favorite frosting.  If you choose to frost the cookies sprinkle them with white sugar before baking in the oven.
